Tasting Notes: Intense ruby-red color. Aromas of ripe red fruit with a preponderance of plum jam. Notes of leather and Cayenne pepper. Dry and persistent, with good tannins.

Suggested Pairings: ripened cheese, game, savory dishes. Excellent as a meditation wine.

Production notes and ageing: The grapes are harvested by hand from almost secular vines (yield: 3 to 4 tons per hectare). The vinification process lasts 9 days, at a temperature of 28 °C, using 'Ganymede' fermentation tanks, which maximize the extraction of natural aromas and colors. The wine stays in steel tanks for 9 months, ages for 6 months in French oak barrels and is finally bottled. It refines for a few months in the bottle before being put on the market.
