Tasting Notes: Light straw-yellow color. Intense aromas of typical Mediterranean flowers and of fresh fruit. It is savory, with a good body, and a taste of fresh almond in the finish. Persistent.
Suggested Pairings: A variety of fish- and shellfish-based dishes. Excellent as an aperitif by the sea.
Production notes and ageing: The grapes are harvested by hand from 15-20 year old plants (yield: 8 tons per hectare). After pressing and a cleaning, the yeasts are inoculated and the must ferments for about 2 weeks at a temperature of about 12 °C. The wine ages on the lees in steel tanks for 5 months and is then bottled. It refines for another 2 months in the bottle before being put on the market.
