Description
Taste of the Mistral Denomination: Vermentino di Sardegna DOC. Variety: Vermentino. Harvest: 2024. Alcohol content: 13% vol. Tasting notes: Pale straw-yellow color. Intense aromas of Mediterranean scrubland flowers and fresh fruit. On the palate it is savory, full-bodied, with a fresh almond aftertaste. Persistent. Recommended pairings: Fish appetizers, first and main courses based on fish, shellfish, and seafood. Excellent for seaside aperitifs. Production and aging notes: The grapes are hand-harvested from 15-20 year old vines (yield of 80 quintals per hectare). After pressing and initial cleaning, yeasts are inoculated and the must ferments for about 2 weeks at a temperature of around 12°C. The wine ages on the lees in steel tanks for 5 months before bottling. It is then aged for a further 2 months in the bottle before being released to market.
