A passito wine that we dedicate to our dear artist friend Joe, who passed away without being able to complete the label we had asked him to create. The labyrinth he designed represents very well the interweaving and complexity of the scents of the surrounding Mediterranean scrub. A wine with great aromatic and gustatory persistence.

Appellation: Isola dei Nuraghi IGT Bianco.

Variety: native white grapes varieties.

Soil type: granite weathering.

Altitude: 350 m above sea level.

Training method: head-trained bush vines (alberello) and espalier.

Age of the vines: about 20 to 80 years.

Vineyard density: 3500 vines/ha.

Yield: 2.5 tons/ha.

Harvest: manual.

Vinification: partial appassimento of the grapes on wooden crates (graticci).

Fermentation: spontaneous in steel containers.

Alcohol: 12.5% vol

Service temperature: 10/12 °C; 50/54 °F.

Ideal with blue and aged cheeses, foie gras, dry desserts and desserts based on cheese and honey.
